Tofu is often sold in water. After opening, I drain the liquid and store unused tofu in a clean container with fresh water, following the package directions. I keep it refrigerated and use it within the period stated by the manufacturer.

A sour smell, unusual color, slimy surface, or damaged package can be a reason to discard the tofu. I do not taste food to test whether it is safe.

For shelf-stable tofu, I follow the storage instructions on the package. Some products can remain unopened at room temperature, while refrigerated tofu needs cold storage throughout the supply chain.

A practical label check

When I stand in front of the refrigerator case, I use this short process:

  1. I check the tofu style and firmness.
  2. I read the full ingredient list.
  3. I look at protein, calcium, sodium, and serving size.
  4. I check the soy allergen statement.
  5. I review storage and use-by instructions.
  6. I compare plain and flavored versions if both are available.

A real grocery choice might look like this: I plan to make a tofu and vegetable bowl, so I choose extra-firm tofu with soybeans, water, and a simple coagulant. I skip a seasoned version with a longer ingredient list because I already have a sauce at home. If I am making a smooth dessert or soup, silken tofu makes more sense because texture matters more than firmness.

Tofu is not a single type of food with one fixed nutrition profile. Its ingredients, texture, coagulant, serving size, and preparation method can all change the final result.

I get the clearest answer by turning the package over and reading the label. The front tells me what the product wants me to notice. The ingredient list and nutrition panel show me what I need to know.
